You need to use dry, firm tvorog/cottage cheese — not a runny one. Otherwise, the syrniki will be hard to shape and may fall apart. The best option is to look for tvorog at a farmers market or in a Russian, Ukrainian, or Polish grocery store.
Preparation
You don’t need to make anything from scratch for this class. But if you enjoy making everything from scratch, or if you can’t find tvorog/cottage cheese in stores, message me and I’ll provide a recipe for making it from whole milk.
