2 cups peeled black-eyed beans (or brown beans)
1 medium onion (chopped or blended)
2–3 fresh red bell peppers (tatashe) or 1–2 scotch bonnet
Salt (about 1 teaspoon adjust to taste)
Water (just enough for blending and whipping batter)
Vegetable oil (for deep frying)
A pinch of seasoning powder or stock cube
A small piece of ginger (for aroma)

Tips & Swaps

It is advisable to peel and soak your beans an hour before the class.

Preparation

Guests should soak peeled beans (or black-eyed peas) for 2 hours before class. If using unpeeled beans, guests can peel them ahead of time to save class time. Please also prepare: * 1–2 onions * Fresh peppers (or chili peppers) * Salt and seasoning cube * Vegetable oil for frying * Blender or food processor * Frying pan/pot * Spoon or scoop * Paper towels/strainer for draining oil Optional: Guests can prepare a dipping sauce, custard or bread to enjoy with the akara after class.
