Preferably use citrus fruits puree/juice for this recipe, such as passion fruit, lemon, orange, or lime. These fruits bring freshness and balance to the creamy base, creating a bright and refreshing ice cream flavor.
Preparation
Before starting the class, mix 150 g of coarse salt with either 1 kg of crushed ice or 1 liter of water. Prepare this mixture at least one day before the class and keep it frozen until class time. You will also need two bowls, one larger than the other so that one can fit inside the other. Ideally, the smaller bowl should be made of stainless steel. You will also need a spatula, a whisk, and a 500ml container to store the ice cream made during this class. If you have one, you can also use a hand mixer.
