1/4 cup olive oil
1 white or yellow onion; small diced
1 small red bell pepper; cored and small diced
3 garlic cloves; finely minced
1 Tbsp. smoked or hot pimentón (or smoked paprika)
1 Tbsp. sweet (regular) paprika
14 oz. can diced tomatoes (fire roasted preferably) juice drained
1 1/2 cups Bomba/ Calasparra /Paella rice
4 oz. Spanish chorizo; sliced into 1/4-inch rounds
4 1/2 cups chicken; seafood; or vegetable stock
1/2 tsp. saffron threads; crumbled and steeped in stock
Salt and freshly ground pepper
1/2 lb. large raw shrimp; deveined (shells on or off)
8 oz. chicken thighs; evenly diced into 1/2-inch pieces 1
1/4 cup dry white wine combined with 1/2 cup water
1 Tbsp. fresh lemon juice
1/2 lb. mussels; scrubbed and debearded (4-5 per person)
1 lb. small clams scrubbed and thoroughly rinsed (3-5 per person)
Optional: 4 squid tubes and tentacles; thin sliced
1/2 cup frozen peas
2 tablespoons chopped flat-leaf parsley for garnish
1 green onion; thinly sliced for garnish for garnish
1 small blood orange
1 large navel orange
1/2 shallot; thinly sliced
1 Tbsp. dried currants; raisins; or craisins
4 oz. Manchego cheese; shaved
Marcona almonds; seasalt or plain
1/2 teaspoon flaky sea salt; if almonds are not salted
Mixed greens (such as arugula; frisee; kale; raddichio; or spinach - cut into bite-sized pieces
1/3 cup Olive Oil
1/2 tsp. orange zest
2 Tbsp. orange juice
2 tsp. white wine vinegar
1 clove garlic; minced;
2 tsp. Dijon mustard
2 tsp. honey
salt and pepper to taste
1 sprig thyme leaves destemmed and chopped leaves

Pro Tips for Perfect Paella • Use the Widest Pan Possible If you don’t own a traditional paella pan, use your largest skillet—preferably stainless steel or cast iron. Prioritize width over depth to allow the rice to cook evenly in a thin layer. • Don’t Stir After Adding the Broth Once the stock is added and evenly distributed, resist stirring. This helps develop proper texture and encourages the socarrat to form. • Layer Flavor Thoughtfully Build depth by sautéing aromatics first, then toasting the rice briefly before adding liquid. • Listen for the Sizzle Near the end of cooking, you’ll hear a gentle crackling sound—that’s the socarrat forming. Reduce heat and let it develop without burning. • Rest Before Serving Let the paella rest for 5–10 minutes off the heat. This allows moisture to redistribute and flavors to settle. Ingredients & Essential Elements of Paella Paella Rice The rice truly matters. Traditional Spanish bomba rice is a short, stubby, medium-grain variety prized for its ability to absorb liquid—up to three times its volume—while maintaining a pleasantly firm, separate texture. This quality allows the rice to soak up saffron-infused broth without becoming creamy or sticky. Avoid Arborio or other risotto-style rice; they release too much starch and will not produce the distinct, caramelized bottom layer known as socarrat. When shopping for bomba rice, you may also see regional names such as Calasparra, Albufera, or Redondo—all excellent choices for authentic paella. Saffron: Saffron threads are the delicate red stigmas of the autumn crocus flower, carefully hand-harvested and dried. Just a small pinch infuses paella with its signature golden hue and a complex flavor that is earthy, floral, and subtly sweet. For the best flavor, lightly toast the threads and steep them in warm stock before adding to the rice. Socarrat: The hallmark of great paella is the socarrat—the thin, crispy layer of caramelized rice that forms on the bottom of the pan. It adds deep, nutty flavor and textural contrast. Achieving socarrat requires: • A wide pan • Even distribution of rice • No stirring after adding liquid • Careful heat control during the final minutes You’ll hear a gentle crackling sound when it begins to form. Preparation

I will make a half recipe, which will generously feed 4 people. This recipe halves nicely, should you not want to make a full recipe for 6-8 servings. Prepare ingredients as directed in the Ingredient list. In a bowl or measuring cup, steep 1/2 tsp. crumbled saffron threads in 4 1/2 cups of preferred stock. Prepare proteins: Rinse and debeard mussels. Rinse clams under cold water several times to remove grit. Dice chicken thighs into small, even cubes. Slice chorizo sausage into 1/4 rounds If using a Paella pan, wipe clean and use a paper towel to lightly oil the pan. You can do the same using a cast iron pan, large braiser, or large, high-sided stainless steel pan.
