Ekuru (white moi moi) is a Yoruba delicacy made from steamed, peeled beans, served with a spicy, fried pepper sauce known as ata dindin. The sauce is prepared by frying blended Tatashe (bell peppers), Habanero (ata rodo), and onions in palm oil with locust beans, smoked fish, and assorted meat.
