For the Jollof Rice: Rice: 4cups long-grain rice (washed) 2.Pepper Blend: 3 large red bell peppers,5 medium fresh tomatoes, 2 Scotch bonnets (Atarodo), and 1 large red onion, 4 garlic and ginger. 3. ½ cup vegetable oil, 1 large onion (chopped), and 1 small can (approx. 140g) tomato paste. 4. Your chicken neatly washed and set aside. 5.Seasonings: 3 bouillon cubes (Maggi/Knorr), 1 tbsp curry powder, 1 tsp dried thyme, 2-3 dried bay leaves, and salt to taste. Finish: 1 tbsp butter and 1 small onion (sliced) For the Fried Plantain :Plantains: 2 large, yellow-ripe plantains (firm to the touch with a few black spots) Frying: 1-2 cups vegetable oil and a pinch of salt.
