2 stalks lemongrass; trimmed to the center soft core (sub: 2" lemon peel rind or 1 tsp. lemon juice)
4 cups vegetable broth
8 kaffir (lime) leaves (Sub: Two 2" lime peel rinds or 1 tsp. lime juice)
2 Tbsp. soy sauce
1 tsp. palm sugar
1 large firm tomato; small diced
3 Tbsp. fish sauce (substitute vegan fish sauce for vegetarian option)
1 Tbsp. Thai chili paste
6 oz. cremini or shiitake mushrooms; thin sliced
4 oz. shrimp; peeled and deveined (or tofu for vegetarian alternative)
Salt to taste
1/4 cup lime juice
4 lime wedges; for serving
Fresh cilantro leaves; chopped for garnish
1 lb. New York Strip or Top Sirloin; thinly sliced against the grain into 1-inch strips
3-4 Tbsp. Red Panang curry paste
1 14-ounce can unsweetened coconut milk
2 tsp. palm (or light brown) sugar
2-3 Thai or Birdseye red chilis; thinly sliced (deseeded for less heat)
6 kaffir lime leaves
1/3 cup unsalted dry-roasted peanuts; rough chopped2 cups Jasmine Rice
2 cups Jasmine Rice; cooked according to package directions

Tom Yum Soup The clear brothy version of Thailand’s “hot and sour” soup is usually cooked with shrimp or, alternatively, with tofu for vegetarians. The words "tom” and “yam" are derived from “tom” referring to the boiling process, while yum means 'mixed' referring to the many aromatics and vegetables. The soup can be made into the creamier Tom Kha by substituting one cup of the broth with a can of coconut or evaporated milk. Red Panang Curry with Beef Panang curries are usually less spicy than traditional red curry, because it uses fewer red chilies, but there's still a distinct kick to it. Panang curry also includes coconut milk and toasted peanuts, thus making it sweeter than other Thai curries. This recipe is served over Jasmine rice with a sprinkle of crushed peanuts on top plus some additional thinly sliced kaffir leaves as garnish. Use a tender cut of beef like New York strip or Top Sirloin.
