I teach practical home cooking for people who want to eat well without cooking from scratch every day. In my live classes, we cook together and prepare food strategically: some things are cooked and frozen, some are prepped to cook fresh later, and some become versatile bases for several different meals. 600–700 g boneless skinless chicken thighs

60 g breadcrumbs
150 ml milk

Dish n3: Coconut Chicken Curry Kit

Dish n5: Roasted Tomato & Red Pepper Sauce
2 red bell peppers

Tips & Swaps

We won’t cook everything the same way. Some foods will be fully cooked and frozen in portions, some will be prepped and frozen ready to cook fresh later, and others will become versatile bases you can turn into different meals. The goal isn’t to fill your fridge with containers of food that gets less fresh every day. We’ll prep the parts of cooking that actually save you time later, freeze what freezes well, and leave quick things like pasta, salads and fresh toppings for the day you eat them. I’ve done the planning for you—you just cook along with me. I’ll show you what’s worth prepping ahead, what’s better left fresh, how to portion and freeze everything, and how to thaw, cook or reheat it later without ruining the texture. You’ll also learn how to use the same prep in different ways, so you don’t have to eat the same meal for several days. After the class, you’ll know exactly what you have in your fridge and freezer and how to turn it into different homemade dinners with just a few minutes of work.

Preparation

During the class, we’ll make 5 different meal-prep staples: Greek Lemon & Garlic Chicken We’ll marinate the chicken and pack it raw and freezer-ready. Later: thaw → bake in the oven. Meatballs We’ll mix, bake and freeze them. Later: pan-fry → add your favorite sauce. Chicken Curry Kit We’ll prep the chicken, spices and sauce ingredients and assemble a freezer-ready curry kit. Later: thaw → cook in a pot → add coconut milk and finish. Beef Taco Base We’ll cook it completely and portion it for later. Later: reheat → use for tacos, bowls, quesadillas or nachos. Tomato Sauce We’ll cook it completely and portion it for the freezer. Later: thaw → use with pasta, meatballs, chicken or other quick meals. I'll add more details about the equipment. Plus, if you have a vacuum sealer and bags, that would be ideal. We won’t cook rice, pasta, salads or other quick sides during the class. Those are better made fresh when you’re ready to eat.
