MEAT & RICE STUFFED PEPPERS (Traditional Albanian Recipe)
A classic Albanian comfort food — peppers stuffed with a flavorful mix of rice, ground meat, and herbs, baked until tender and juicy. Instructions: 1. Prepare the peppers: Wash the peppers, cut off the tops, and remove the seeds. Keep the tops to cover them later. 2. Cook the filling: In a large pan, heat olive oil and sauté the onions until soft. Add the grated carrots and chopped red peppers, and cook for 5 minutes. Then add the ground meat and cook until it changes color. Stir in chopped tomatoes, dill, salt, and pepper. Finally, add the rice and cook everything together for another 5–7 minutes. 3. Fill the peppers: Stuff each pepper with the mixture, leaving a little space on top for the rice to expand. Place a tomato slice or the pepper top as a lid. 4. Bake: Arrange the stuffed peppers in a baking dish. Add about 1 cup of water or tomato sauce to the bottom of the pan. Bake at 180°C (350°F) for about 45–60 minutes, until the peppers are tender and slightly browned on top. 5. Serve: Serve warm with bread or a side of yogurt.
